Crab-centric restaurant opens first Shanghai location in Qingpu
Heshe Zuiwuzhi (Chinese: 禾舍·醉物誌), a new restaurant specializing in crab dishes, has opened its first Shanghai location next to the rice fields of Linjia village in Zhujiajiao town, Qingpu district.
At Heshe Zuiwuzhi, crab takes center stage, prepared in diverse styles. The menu features dishes such as drunken crabs marinated in Huadiao wine, crab roe noodles, crab roe soup dumplings, and crab roe tartare with baguette. Crab roe is also paired with familiar Chinese ingredients, including mapo tofu, broccoli, and fresh gorgon seeds.
The restaurant sources its crabs from an agricultural cooperative in the Ningxia Hui autonomous region, where they are raised on a diet of corn and goji berry by-products. According to the cooperative, the crabs have firm meat and contain 30 percent more protein than regular ones. They are transported to the restaurant within 48 hours through a cold chain, maintaining their freshness.
The menu changes with the seasons, with Ningxia's lamb barbecue among its summer offerings. The restaurant sources ingredients from across the country, including mushrooms from Yunnan province. Its menu also features dishes that combine Chinese ingredients with Western-style preparations, offering a unique culinary experience.
