During hairy crab harvesting season, Shanghai's local restaurants often feature an "Autumn Crab Feast" menu, with crab meat tofu being a staple dish.

The authentic way of cooking crab meat tofu is to steam the crab until it is fully cooked, then extract the meat and mix it with the tofu.

Alternatively, some may stir-fry the crab roe in with the dish. The golden crab roe stains the snowy white tofu, and as you take a spoonful, the crab meat is revealed as bright and tangible.

The broth is smooth and silky, rich and delicate, creating a dense and intertwining texture, elevating the smoothness of the tofu, which makes it a favourite dish among Shanghai's residents.
